Bulgur wheat is a whole grain that’s rich in fiber and protein, making it a great option for vegetarians and vegans. It’s also low in fat and calories, making it a great choice for anyone looking to control their weight. And because it’s so versatile, it can be used in a wide range of dishes, from pilafs to stews to salads like this one.
The parsley and mint in this recipe are both rich in antioxidants and other important nutrients, including vitamin K and vitamin C. They also add a fresh, bright flavor that complements the nutty taste of the bulgur. The green onions and tomatoes provide additional nutrients and flavor, while the lemon juice and olive oil give the dish a zesty kick.
