Ingredients
  

  • 1 Lbs Smoked Bacon
  • 2 Medium Red Onions
  • 1 Lbs Green Lentils
  • 2 Qrts Chicken Broth
  • 3 Medium Tomatoes Diced
  • 1 Tbs Oregano
  • 1 Tbs Thyme
  • Salt and Pepper to Taste

Instructions
 

  • Render the bacon in a the heavy pot.
  • Add onions, and lightly caramelize.
  • Add Lentils and half the stock to pot.
  • Add diced tomatoes and herbs and cook until tender about 25-30 minutes.
