Ingredients
  

  • 16 OZ Fresh Spinach Stemmed and washed
  • 1 Clove Garlic
  • 1/2 Cup Sliced Almonds
  • 1/4 Tsp Kosher Salt
  • 1/4 Tsp Red Pepper Flakes
  • 3 Tbs Olive Oil
  • 3 Tbs Lemon Juice
  • 1/2 Cup Finely Grated Parmesan Cheese

Instructions
 

  • To make toasted almonds with a slight garlic flavor, heat a large skillet over medium heat and add olive oil. Meanwhile "spear" a garlic clove onto a fork. Once the oil is hot and smoking lightly, add the almonds to the skillet and stir with the fork for about 30 seconds until they turn brown. By stirring the almonds with the garlic clove on the fork, the garlic flavor will lightly coat the almonds without overpowering them.
  • Put spinach in the pan with salt and red pepper flakes, add as much as it can hold comfortably. As the spinach cooks and shrinks, add more handfuls and stir until all the spinach is cooked. Add lemon juice and Parmesan cheese and serve right away.
