Apple, Cranberry & Walnut Salad
Equipment
- 1 Large Salad Bowl
- 1 Food Processor or Glass jar with lid
Ingredients
- 1 Lbs Spring Mix Salad
- 1 Cup Pickled beets
- 1/4 Cup Sliced Red Onion
- 1 Med Honey Crisp Apple Sliced
- 1/4 Cup Chopped Walnuts
- 1/4 Cup Crumbled Goat Cheese
Sweet Poppy Seed Vinaigrette
- 1/4 Cup Extra Virgin Olive Oil
- 1/2 Cup White Wine Vinegar
- 1 Tsp Paprika
- 1 1/2 Tsp Poppy Seeds
- 1/4 Cup Raw Cane Sugar
Instructions
- Combine all vinaigrette ingredients to jar or food processor and mix until well blended.
- Keep Refrigerated, and mix well before each use.
- Add spring mix, dried cranberries, chopped walnuts, red onion, pickled beets to large bowl.
- Toss in vinaigrette dressing in large bowl with salad. Top with apples slices and goat cheese crumbles.
