  • 1 Large stock pot

Ingredients
  

  • 32 OZ Beef Bone Broth
  • 4 Whole Carrots Sliced
  • 2 Ribs Celery diced
  • 2 Medium Potatoes Cut in 1 inch pieces
  • 1 Whole Medium Onion
  • 8 OZ Tomato Sauce
  • 1 1/2 LBS Lean grass fed ground beef
  • 1/2 Cup Short grain white rice
  • 1 Whole Zucchini
  • 1/2 tsp Himalayan Pink Salt
  • 1/4 Tsp Black Pepper
  • 2 Cloves Garlic Chopped
  • 2 Whole Lemons Not essential to recipe but usually served to add to soup.
  • 1 Cilantro as garnish not essential to recipe
  • 1/4 Cup Corn Kernels Frozen

Instructions
 

  • Bring beef broth, tomato sauce, chopped garlic, onions, pepper to a boil.
  • while waiting for broth to boil, mix together salt, ground beef, & rice
  • Once water boils, reduce heat to a simmer.
  • Form into 1 inch meatballs and slowly place meatball in to the pot of broth.
  • DO NOT PLOP THEM INTO THE POT. The broth is very hot. Don't do it. Place them gently with a large ladle or spoon into the pot of water.
  • Add Potatoes, Celery, Carrots and Corn
  • Cover and cook at a low boil for 25 minutes.
  • Add Zucchini and cook for an additional 5 minutes.
  • Garnish with cilantro, lemon, & crushed red pepper to taste
