Ingredients
  

  • 6 Cups Chicken Broth or Vegetable Broth
  • 3 Tbs Olive Oil
  • 1 Lbs Baby Portobello Mushrooms Thin sliced
  • 1 Lbs White Mushroom Thin sliced
  • 2 Med Shallots Diced
  • 1 1/2 Cups Arborio Rice
  • 1/2 Cup Dry White Wine
  • 4 Tbs Organic Butter
  • 2 Tbs Chives Chopped
  • 1/2 Cup Grated Parmesan
  • Dash Sea Salt and Fresh Ground Pepper

Instructions
 

  • Place a saucepan over low heat and warm up the broth.
  • While heating 2 tablespoons of olive oil in a large saucepan over medium-high heat, add portobello and white mushrooms and cook and stir until they become soft which usually takes about 3 minutes. After that, transfer the mushrooms and their liquid to a bowl and reserve them for later use.
  • Add one more tablespoon of olive oil into the saucepan. Add shallots and stir for a minute. Then, add rice and continue to stir until each grain is well coated with oil and turns into a pale, golden color, which might take around two minutes or so.
  • Stir the wine consistently into the mixture until fully absorbed. Afterwards, introduce half a cup of warm broth into the rice dish, then mix the ingredients until the broth is duly absorbed.
  • Take the pan off the stove and combine the saved mushrooms and their liquid, butter, chives, and Parmesan cheese. Mix well.
  • The dish should be seasoned with salt and pepper before serving and it is recommended to serve it without delay.
