Ingredients
  

  • 1 Lbs Dried Pinto Beans
  • 2 Small Sprig Cilantro
  • 3 Cloves Garlic Crushed
  • 1 Bay Leaf
  • 1 Small Sprig Oregano

Instructions
 

  • scallions, herbs, garlic, and salt are added to 4 quarts of water and brought to a boil in a large pot. Once the water begins to boil, the heat can be reduced to medium-low and the beans can be simmered uncovered.
  • It's important to skim the surface and stir occasionally, as well as adding more water if necessary to keep the beans covered.
  • The cooking time will vary depending on the age of the beans, but they should be tender after 1 ½ to 3 ½ hours. Once the beans are cooked, the scallions, herbs, and garlic can be removed. These flavorful beans can be enjoyed on their own, in a salad, or as a side dish.
