Caldo De Albondigas
Equipment
- 1 Large stock pot
Ingredients
- 32 OZ Beef Bone Broth
- 4 Whole Carrots Sliced
- 2 Ribs Celery diced
- 2 Medium Potatoes Cut in 1 inch pieces
- 1 Whole Medium Onion
- 8 OZ Tomato Sauce
- 1 1/2 LBS Lean grass fed ground beef
- 1/2 Cup Short grain white rice
- 1 Whole Zucchini
- 1/2 tsp Himalayan Pink Salt
- 1/4 Tsp Black Pepper
- 2 Cloves Garlic Chopped
- 2 Whole Lemons Not essential to recipe but usually served to add to soup.
- 1 Cilantro as garnish not essential to recipe
- 1/4 Cup Corn Kernels Frozen
Instructions
- Bring beef broth, tomato sauce, chopped garlic, onions, pepper to a boil.
- while waiting for broth to boil, mix together salt, ground beef, & rice
- Once water boils, reduce heat to a simmer.
- Form into 1 inch meatballs and slowly place meatball in to the pot of broth.
- DO NOT PLOP THEM INTO THE POT. The broth is very hot. Don't do it. Place them gently with a large ladle or spoon into the pot of water.
- Add Potatoes, Celery, Carrots and Corn
- Cover and cook at a low boil for 25 minutes.
- Add Zucchini and cook for an additional 5 minutes.
- Garnish with cilantro, lemon, & crushed red pepper to taste
